Southwestern Black Bean, Quinoa and Mango Medley (Skinnytaste)


So this is a tasty dish that we have enjoyed a few times at home, paired with chicken or steak or fish, and it is glorious. You can feel the health seeping through your veins as you eat this dish. It is very clean and light, can be vegetarian or otherwise, and it is just yummy. This is a recipe from the beloved Skinnytaste Blog, that I use for 5-6 recipes each month. She even has crockpot recipes! Wow! And obviously, everything is Weight Watchers, kid, and husband friendly. The recipe is below, with my comments in bold.

Southwestern Black Bean, Quinoa and Mango Medley
Servings:Serving Size: 1 cup • Points+: 4 pts


  • 15-ounce can black beans, no salt added, rinsed and drained
  • 1 cup cooked quinoa (according to package directions)
  • 1 cup fresh or frozen corn
  • 1 small red bell pepper, chopped
  • 1 cup chopped fresh mango
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño pepper, seeded and finely diced
  • juice from 1 medium lemon or lime
  • 1 1/2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp each, chili powder ground cumin, 1/4 tsp ground turmeric

Mix together the beans, quinoa, corn, bell pepper, mango, onion, cilantro, and jalapeño in a mixing bowl.

Whisk together the lemon juice, olive oil, garlic, cumin, chili powder, and turmeric in a small bowl.

Drizzle over the mixture and toss. Refrigerate until ready to serve.

This recipe is as easy as you think. Cook your quinoa. Drain your canned ingredients. Chop your fresh ingredients. Whisk together the liquids and spices. Then mix everything together. So easy. We loved it as a side to salmon, beef or barbequed chicken, but it is filling on its own. It is a great way to get a lot of veggies and fruit in one serving, and it just makes you feel so healthy! Double the recipe for a pot luck or party and enjoy!
