Potatoes Au Gratin (Disneyland Resort, from the Blue Bayou)

IMG_1113I rediscovered Disneyland after I graduated from college, moved back to San Diego, and had a friend who was obsessed with Disneyland. She talked me into getting a passport and I never regretted my decision!  One of the times that we went, we went to the Blue Bayou.  It is the most magical, beautiful restaurant inside a Disney park (though I have not seen “Be Our Guest” yet).  The food is out of this world PHENOMENAL.  Make a reservation before you head to Disneyland, and make dining at this restaurant park of your Disney Day!  It is located inside of the Pirates of the Carribean ride, and it is always nighttime (which is a relief after hours in the sun).  You get to see riders of the POTC ride float by, and hear their mirthful screams as they fly down the first waterfall to their watery graves! Wow! #Disneymagic

I tried these potatoes at the restaurant and fell in love! I was lucky, and found the recipe online for all of us to make at home!  It is not a difficult recipe, and you will love the results. You can definitely impress and feed a crowd with these things (I did so at Easter, for a birthday lunch, for a romantic dinner, etc etc). I have made them 4 or 5 times and they have come out perfect every time. They are fail-proof and yummy!  I found the recipe here.


1 Brown Onion, Julienne (see how, here)

1 Teaspoon of Butter

3 pounds Peeled and Thin Sliced Potatoes (use your mandoline slicer for this, 1/8 inch slices)

2 Cups Heavy Cream

1 Teaspoon of Salt

1/8 Teaspoon  Fresh Ground White Pepper

¼ Teaspoon    Fresh Thyme Leaves

2 Teaspoon   Garlic Finely Chopped

1/8 cup Jalapeno Pepper (canned, I always skip this)

1/8 tsp Chicken Base (chicken bouillon cubes)

1/2 cup Grated Parmesan Cheese


  1. Preheat oven to 350 F. Butter your baking dish.IMG_1111
  2. Saute onions with butter until caramelized.
  3. Mix sliced potatoes, and caramelized onions and put in buttered baking dish.
  4. Mix cream, garlic, salt, white pepper, jalapenos (if using), chicken base and thyme leaves and blend until smooth.
  5. Pour blended mixture over potatoes and onions, mix and cover.
  6. Bake for 2 hours or until potatoes are tender.
  7. Remove potatoes from oven and sprinkle with parmesan cheese.
